DIRECTIONS

 

Spray slow cooker with non-stick spray.

 

Add all ingredients except garnish. 

 

Cook 5-6 hours on high setting.

 

Serve with chopped parsley and grated cheese.

This soup can be frozen.  Garnish after reheating.

INGREDIENTS

 

  • 2 small boneless chicken breasts, about 3/4 lb.

  • 1 carton SMT Fire Roasted Crushed Tomatoes or 1 28 oz. can SMT Crushed Tomatoes

  • 3/4 can uncooked quinoa

  • 1 cup onions, diced

  • 1 cup carrots, diced

  • 1 cup celery, diced

  • 1 cup zucchini, diced

  • 1/2 cup parsnips, diced

  • 2 cloves garlic

  • 1 small sprig fresh rosemary

  • 1 Tsp Herbs de Provence spice blend

  • 5 cups chicken broth

  • 1/2 cup white wine (optional)

  • 1/4 tsp red pepper flakes (optional)

 

    For garnish:

 

  • 2 Tbsp Italian parsley

  • Grated cheese
