Tomato, Carrot, and Orange Soup ~ Vegan
In a large pot heat grapeseed oil. Add onions and sauté 10-15 minutes over very low flame, stirring frequently. Do not let them brown.
Add remainder of ingredients and bring mixture to a boil.
Lower the heat, cover, and simmer for 30 minutes.
Cool to room temperature then puree with either an immersion blender, or in batches in a blender.
Chill until ready to serve.
1/4 cup grapeseed oil
1 large onion, chopped
1 C. Chopped carrots
1 tsp orange rind, grated
1/8 tsp ground cloves
1 1/2 c fresh orange juice
2 28 oz cans (or cartons) SMT Diced Tomatoes
1 tsp salt
1/2 tsp pepper, preferably white pepper
