T O M A T O    S O U P

W I T H    K A L E    &    Q U I N O A



Add all ingredients to slow cooker except kale. 


Cook 3-4 hours on high setting.


When ready to serve add chopped kale to individual soup bowls.


Garnish with salt and pepper to taste.

This soup can be frozen.  Do not add kale prior to freezing.



  • 1 cup uncooked quinoa

  • 1 carton SMT Diced Tomato

  • 1 15 oz. can cannellini beans or 1 13.4 oz carton cannellini beans

  • 2 leeks diced, white parts only (1/2 - 3/4 cups)

  • 1 tbsp Herbs de Provence

  • 1 bay leaf

  • 4 cups of vegetable broth

  • 1 lb. kale.
